Australian papaya is in season and Missy Peacharoo has been busy creating a scrumptious papaya dish for the kids and adults. Skybury Farms papaya, strawberries and blueberries with a dash of Maleny yoghurt and you have one divine, nutrient-rich snack. Papaya Berry Yoghurt is one of Missy’s yummiest treats.
Papaya is a powerful digestive aid that makes it easy to supply a variety of key antioxidants and immune benefits. It’s great for gut health, keeps your skin glowing and is the perfect immunity booster. Just 1 cup of papaya provides more than twice your recommended daily intake of Vitamin C and A. Naturally low in fat too, it easily becomes one of the tastiest options for breakfast, a healthy snack or perhaps an added ingredient in your favourite dish. It’s a versatile fruit that’s enjoyed by many cultures.
Local dairy farmers the Hopper family, produce divine and very creamy gourmet yoghurt in the heart of the Sunshine Coast. Only a hop (pun intended) skip and jump from the Gold Coast, Missy loves supporting locals. This multi-award winning yoghurt adds the finishing touch to Missy’s Papaya Berry Yoghurt recipe. Missy Peacharoo enjoys it when the chunky strawberries melt in my mouth. With papayas’ nutritional benefits almost endless, I start my day with a healthy routine of fruit and yoghurt. Add a dash of ground cinnamon for extra flavour and added health benefits.
Cut the papaya horizontally into 2 halves and scoop out the seeds.
Add the strawberries, and blueberries inside each half.
Add cinnamon to the yoghurt.
Add a few dollops of Maleny Yoghurt and top with more berries.
Missy enjoys papaya as a snack though adding it into a healthy garden salad creates an amazing flavour.
